[Ingredients]
- Glass noodle: 1 package
- Onion: 2 pieces
- Carrot: 1 piece
- Spinach: 1 bunch
- Shiitake mushrooms: 6 pieces
- Pork (sirloin): 200gr
[Seasoning]
- Soy sauce: 3 tablespoons
- Sugar: 1/2 tablespoon
- Sesame oil: 3 tablespoons
- Oligosaccharide syrup: 1/2 tablespoon
- Pepper: 1/2 teaspoon
- Minced garlic: 1 tablespoon
- Sesame seeds: 1 tablespoon
- Salt: 1/2 teaspoon
[Cooking steps]
- Soak the glass noodles in water. Soaking the noodles is necessary to make them soft for a perfect japchae.
- Soak the shiitake mushrooms in water as well.
- Marinate the pork for japchae in the seasoning. Adjust the amount of seasoning according to the amount of meat. Combine 2 tablespoons of soy sauce, 1/2 tablespoon of sugar, 1/2 tablespoon of sesame oil, 1/2 tablespoon of minced garlic, and 1/2 teaspoon of pepper, and mix well.
- Blanch the spinach in boiling water with 1/2 tablespoon of salt. Blanch it only briefly until it wilts.
- Drain the spinach thoroughly and mix with 1/2 tablespoon of minced garlic, 1/2 teaspoon of salt, 1/2 tablespoon of sesame oil, and 1/2 teaspoon of sesame seeds.
- Julienne the carrot and onion. Julienne the shiitake mushrooms as well, and mix with 2 tablespoons of soy sauce, 1/2 tablespoon of sugar, and 1/2 tablespoon of sesame oil.
- Heat oil in a pan and start by sautéing the ingredients that are lighter in color and don’t release much oil first, in the order of onion, carrot, shiitake mushrooms, and then meat. A tip for using just one pan is to sauté the ingredients from lightest to darkest in color.
- Sauté the ingredients until they are crisp-tender and then gather them in one place.
- Cook the soaked noodles in a pot with a ladle each of soy sauce and soybean oil. Since the noodles are already soaked, cook them for just 1-2 minutes.
- Drain the noodles and mix them with 1/2 tablespoon of minced garlic, 1/2 tablespoon of soy sauce, and sesame oil.
- Add the mixed noodles and the other ingredients to the pan and stir-fry quickly. Adjust the seasoning with soy sauce and sugar or oligosaccharide syrup to taste. Even without additional seasoning, the vegetables will have absorbed flavors and taste good. Finish by drizzling with sesame oil for a glossy finish.
- Sprinkle with sesame seeds, and japchae is ready!
